Keto Stuffed Bell Peppers

These delicious stuffed bell peppers are a flavorful and satisfying vegetarian option for a ketogenic diet. Filled with a mixture of cheese, herbs, and flavorful spices, they are sure to become a staple in your meal rotation.

Ingredients:

  • 4 large bell peppers (any color)
  • 1 cup cauliflower rice
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp chopped fresh basil
  • 1 tbsp chopped fresh parsley
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. Cut the tops off of the bell peppers and remove the seeds and membranes. Set aside.
  3. In a large saucepan, cook the cauliflower rice according to package instructions. Set aside.
  4. In a large bowl, mix together the cooked cauliflower rice, mozzarella cheese, Parmesan cheese, basil, parsley, oregano, salt, and pepper.
  5. Fill each bell pepper with the mixture and place them in the prepared baking dish.
  6. Bake for 20-25 minutes or until the cheese is melted and the peppers are tender.
