Keto Stuffed Bell Peppers
These delicious stuffed bell peppers are a flavorful and satisfying vegetarian option for a ketogenic diet. Filled with a mixture of cheese, herbs, and flavorful spices, they are sure to become a staple in your meal rotation.
Ingredients:
- 4 large bell peppers (any color)
- 1 cup cauliflower rice
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 tbsp chopped fresh basil
- 1 tbsp chopped fresh parsley
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions:
- Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
- Cut the tops off of the bell peppers and remove the seeds and membranes. Set aside.
- In a large saucepan, cook the cauliflower rice according to package instructions. Set aside.
- In a large bowl, mix together the cooked cauliflower rice, mozzarella cheese, Parmesan cheese, basil, parsley, oregano, salt, and pepper.
- Fill each bell pepper with the mixture and place them in the prepared baking dish.
- Bake for 20-25 minutes or until the cheese is melted and the peppers are tender.
